What is the deal with the ohm numbers given? I record via audio interface. Is this the right headphone for me in that regard? (The AKGs I use are 55 ohms).

The ohm number indicates the resistance of the headphones. The higher the resistance, the quieter the headphones, but the distortion factor also decreases - in other words, the headphones sound cleaner. It is important to have a headphone amplifier with enough power for 250 ohm headphones. With an ordinary audio interface, however, this should not cause any problems.
